At our trattoria, we serve you the trifula* we dig ourselves from our woods.
At our restaurant in Asti, we don’t buy white truffles. We find them every morning in the Asti woods, with our dogs. What we dig at dawn, we serve at the table in the evening. Very few restaurants do this. The result? Freshness you won’t find anywhere else, 100% from Asti.
*trifula in Piedmontese means “truffle”, specifically the prized white truffle.

There is a season when the hills around Asti are filled with unique aromas. The must and grape pomace remind us of the just-finished harvest. The leaves fall with the rain and smell of earth. And then there is the most elusive, most sought-after scent: the white truffle.
We dig it at dawn, we serve it at night
Among truffles it is the most precious, growing hidden underground only where the right combination of soil and vegetation exists. For generations, it has been sought with patience, in the early light of day, together with the tabui – the truffle dog. We personally collect the truffles we serve to our guests, from our woods just a few kilometers from I Bùgianèn.

What is the white truffle and why is it so special?
The white truffle is a fungus that grows underground in very limited areas of Piedmont, including the Asti region. It is considered the most precious in the world for its intense, unmistakable aroma, capable of turning even the simplest dishes into extraordinary experiences.
Isn’t white truffle only from Alba?
No: the white truffle grows in several areas of Piedmont, and the Asti region is one of the most suited. In fact, many truffles sold on international markets with the label “from Alba” actually come from the hills around Asti. At I Bùgianèn we serve only truffles collected in our own truffle grounds, just a few kilometers from the trattoria: the most authentic way to discover that the heart of white truffle also beats strongly in Asti.
When is white truffle available at I Bùgianèn?
The white truffle season runs from October to late December, with peak availability in autumn months. It is a rare, natural product, which is why places for this experience are limited.
What’s the difference between the tasting menu and the “truffle at the table” experience?
With the tasting menu we offer you a complete journey: traditional Asti dishes designed to highlight the white truffle. With the “truffle at the table” experience, instead, you can purchase a whole truffle for your group: our staff will grate it directly over the dishes of your choice and, if you wish, you can take home what remains.
Where does the truffle you serve come from?
The truffles you find at I Bùgianèn come from our private truffle ground, just a few kilometers from Asti. They are personally collected by the owners, accompanied by the tabui – the truffle dog – as tradition requires. It’s the best way to guarantee freshness, authenticity, and a direct link to the land.
How much truffle is served in the dishes?
In the tasting menu we serve a balanced quantity of truffle for each course. If you choose the “truffle at the table” option, the amount depends on the weight of the truffle purchased: you will decide how much to use during dinner.
Do I need to book in advance?
Yes, we recommend booking in advance. White truffle is highly sought after and available only for a short time each year. By booking, you secure your spot and the chance to live this unique experience.
I don’t know Piedmontese wines: how can I choose?
Don’t worry: our staff is ready to guide you. We’ll help you find the perfect wine to accompany the dishes you choose and to make the most of the truffle’s aroma.
Can I live the experience even if I don’t eat meat?
Yes. White truffle pairs wonderfully with vegetarian dishes too, such as eggs or handmade tajarin. Just let us know your needs when booking, and we’ll create a menu tailored to you.
